Simple and tasty! Cook and store in the fridge for snacks, salads, rice paper rolls, sandwiches or any meal on the go. The liquid left can also be used as broth or stock... how good is that?
Equipment
Pressure cooker. Either traditional stove top of electrical.
Ingredients
Chicken (the amount is up to you)
Salt & pepper
Any herbs you prefer, for example, paprika, dried oregano or parsley
Small amount of water to activate pressure (1/4 cup)
Steps
Add chicken, herbs and pour water around the sides. Water is not always essential, however, lack of liquid can prevent the pressure to build quick enough.
Pressure cook for 15 minutes.
Release pressure based on your device method.
Allow to rest for 5 minutes before shredding.
Enjoy or store for later.
Remain liquid can be strained and used for stock or chicken broth. Freeze and use whenever you need.
