Chilli tuna and brown rice salad


Ingredients

  • 1 small can chilli tuna

  • 1 125g packet cooked brown rice (or half a regular 250g sized)

  • 1 cup of chopped spinach or rocket

  • 1/4 avocado

  • 1/3 cup chopped cucumber

  • 1/3 cup chopped cherry tomatoes

  • 1 tablespoon of finely copped red onion

  • 2 teaspoon of jalapeños (optional for added spice 🌶)

  • 1/2 teaspoon dried oregano

  • Salt and pepper to taste


Steps

  • While rice is cooking in microwave (follow packet instructions), prepare salad ingredients.

  • In a mixing bowl add spinach/rocket. Place hot rice on top... this will help to lightly wilt greens.

  • Add remaining ingredients, seasoning and mix well.

  • Serve and enjoy
