Only a few minutes prep time and only 8 minutes cooking time... yes I timed it! So much flavour in so little time...
Ingredients
For two servings
Two pieces of 150g skinless salmon pieces
2 tablespoon honey
2 tablespoon soy sauce
4 garlic gloves, finely chopped or minced
1 tablespoon of chopped ginger
200g Broccolini (or broccoli)
100g snap peas
140g soba noodles
200g mushrooms, chopped
1/4 red onion, finely sliced
1 teaspoon chilli oil (optional)
To serve: coriander and sesame seeds (optional)
For one serving
1 teaspoon of sesame oil (or any oil if not available)
150g skinless salmon piece
1 tablespoon honey
1 tablespoon soy sauce
1/2 teaspoon of chilli oil (optional)
2 garlic gloves, finely chopped or minced
1/2 tablespoon of chopped ginger
100g broccolini (or broccoli)
50g snap peas
70g dried soba noodles
100g mushrooms, chopped
1/8 red onion, finely sliced
To serve: coriander and sesame seeds (optional)
Steps
Prepare marinade by mixing soy, honey, ginger, garlic, chilli oil, salt and pepper together.
Coat salmon in a bowl with marinade. This step can be done in advance but honestly I think it is just as good only left for a few minutes while prepping everything else.
Boil water for noodles.
Preheat pan and lightly oil.
To make all in sync add mushrooms and red onion into pan, one minute later add soba noodles.
Cook mushrooms and onion for a further minute, then add salmon into pan with all of the marinade with 1/3 cup of water and immediately cover with lid and lower heat to low-medium.
Two minutes later, add green vegetables to pan, cover again and cook for 5 minutes.
Drain soba noodles when they are al dente and add into the pan with salmon and veg. Mix noodles in sauce as much as possible.
Continue to cook covered for one minute.
Remove salmon and greens and plate. Keep mushrooms and onion with noodles.
Add coriander.
There shouldn’t be too much liquid left at this point, continue to quickly cook uncovered coating the noodles in the sauce. Turn up the heat to reduce quickly if required.
Serve noodles and enjoy :)
