Zucchini and egg cakes with goats cheese

Healthy breakfast to start the day! This breakfast is quick and easy and can be matched with your favourite side...

What you'll need...

  • 150g of grated zucchini (1 cup)

  • 1 egg

  • 50g goats cheese

  • Small handful parsley, chopped

  • Salt and pepper

  • Your favourite side... options included bacon, smoked salmon or avocado



Instructions

  • Mix grated zucchini and egg together, ensure it covers all zucchini well. Add half the goats cheese and salt and pepper.

  • As you add each portion to the pan, give mixture a good re-mix to ensure egg is evenly distributed in each scoop. Add approximately 2 tablespoon per portion to a pre heated lightly oiled pan. Leave on medium heat and after adding all portions turn to slightly lower. Egg rings will make it easier to keep in shape, however it is not essential! Having the right heat before adding to pan will cook the egg quickly as you add, stopping it from spreading.

  • Flip after approximately 2 minutes. Before flipping, check underneath to ensure lightly browned. Brown other side and serve.

  • Serve and cover with goats cheese, parley and your side.
